Cottage Cheese Biscuits | Baking with Dorie

Cottage cheese biscuits are not biscuits I’ve made before. For that matter, I don’t recall when I use cottage cheese last in my baking. It’s rather embarrassing to admit I have to ask where to find cottage cheese in the grocery store. Well that’s the start of this week’s bake.

The reasons for using cottage cheese, according to Dorie, are several. First, it adds tang to the biscuit dough. Second, it is easy to work with. Third, the biscuits bake up tall. My takes are: no, yes and yes. To elaborate, I can hardly taste tang, or any flavor of note.

What I notice on the dough, however, is the white curds throughout. It looks like cottage cheese does not get fully incorporated in the dough. Once the biscuits are baked, the curds show up as dark brown pimple-like rounds on the surface. Perhaps, that might have contributed to the overall dryness of the biscuits.

    Oh that’s interesting, my dough did not look much like that at all… I whisked my cottage cheese really well into the milk though and there were very few lumps though you could definitely see some darker spots there. Mine were not dry at all (and my scones usually are!).

    oh man. my biscuits and scones can be hit-or-miss, so i’m a little nervous about these.

    Hmmm? My biscuits didn’t look pimply. I wonder if it has to do with the size of the cottage cheese curds. Did you mix the cottage cheese with the milk first? Your biscuits still look delicious and I’m sure they were tasty with the eggs.

    I had a similar experience as you…curds in my dough and what I would call dry biscuits, but I usually think they are dry haha 🤦‍♀️ I have to say your egg sandwich look delicious!

    The dough was so nice to work with. I guess I mixed mine rather well because I didn’t have any cottage cheese lumps. Yours look perfect.
