Sausage and Cabbage | José Andrés

Hot Italian sausage with baby cabbage

Sausage and cabbage is a no-recipe recipe from José Andrés. The fun part is you can follow the general guidelines as to which ingredients to use and the order in cooking them. Besides, there are many variations and substitutions to play with. Obviously, the kind of sausage and cabbage selected matters to the flavor of the dish. There are no quick and fast rules as to the touch and feel of the dish as long as it’s cooked. The only demand is to bring fun and joy to the process.

Watch the video (link: #RecipeForThePeople) to see how José Andrés and his daughter make the dish during the pandemic. Having fun while cooking and shaking and singing. Get the point? José can cook with joy and enthusiasm. So enjoy feeding family, friends and the people — in the style of José Andrés. The joy is in cooking for others.

Start by adding olive oil to the pan. Sauté several cloves of garlic, skin on, under moderate heat. Stir in the onion and cook until softened. Then scatter slices of sausage in the pan. Cook until slightly browned. Toss in all the cabbage and continue cooking. Deglaze with wine of your choice. Sprinkle sesame seeds, salt and pepper and paprika every step of the way. Share and enjoy!
